Date and Walnut Omelette

**Ingredients**:

  • – 3 large eggs
  • – 2 tablespoons milk or cream (optional, for fluffiness)
  • – 6-8 dates, chopped
  • – 2 tablespoons walnuts, roughly chopped
  • – 1 tablespoon butter or cooking oil
  • – Pinch of salt
  • – Pinch of cinnamon or nutmeg (optional, for extra flavor)

**Instructions**:

1. **Prep the Eggs**: Crack the eggs into a bowl, add a pinch of salt, and beat them well. If you’d like a creamier texture, mix in the milk or cream.

2. **Toast the Walnuts**: Heat a nonstick pan over medium heat. Add the walnuts and lightly toast them for 1-2 minutes, until fragrant. Remove and set aside.

3. **Cook the Dates**: Add a small amount of butter or oil to the same pan. Sauté the chopped dates for 1-2 minutes, allowing them to soften and release their sweetness.

4. **Combine and Pour**: Return the toasted walnuts to the pan with the dates, spreading them evenly. Lower the heat and pour the beaten eggs over the mixture.

5. **Cook the Omelette**: Allow the omelette to cook gently for 2-3 minutes, or until the eggs start to set. You can sprinkle a pinch of cinnamon or nutmeg over the top if desired.

6. **Fold and Serve**: Fold the omelette in half and cook for another 1-2 minutes until done. Slide onto a plate and serve warm.
