This Lavash Bread Rose Tahdig is a stunning fusion of taste and artistry, where crispy layers of lavash are elegantly rolled into delicate rose shapes. The golden crust and intricate design make it a show-stopping centerpiece that is as visually captivating as it is delicious.

Ingredients:
– 2-3 sheets of lavash bread
– 2 cups basmati rice, washed and soaked
– 2-3 tablespoons plain yogurt
– 2-3 tablespoons saffron water (prepared by steeping a pinch of saffron in hot water)
– 3-4 tablespoons melted butter or oil
– Salt (to taste)
Steps:
1. Prepare the Base: Boil the basmati rice until it’s just shy of fully cooked, then drain.
2. Cut and Roll Lavash: Cut the lavash bread into long strips. Roll each strip into a rose-like shape by curling the edges inward.
3. Layer the Tahdig: In a large, non-stick pot, mix yogurt, saffron water, a pinch of salt, and 1-2 tablespoons of melted butter. Spread this mixture evenly at the base.
4. Place the Roses: Arrange the rolled lavash roses on top of the saffron-yogurt mixture in a circular pattern.
5. Add the Rice: Gently layer the par-cooked rice over the lavash roses, being careful not to disrupt them. Drizzle the remaining melted butter or oil over the top.
6. Cook Slowly: Cover the lid with a clean kitchen towel to catch condensation and place it securely on the pot. Cook on low heat for about 30-40 minutes, until the rice is steamed and the lavash bottom forms a golden, crispy crust.
