Samin Nosrat’s “House Dressing,” inspired by Via Carota, is a creamy sherry-shallot vinaigrette.

Ingredients:
- 1 large shallot, finely diced (rinsed in cold water to remove harshness)
- 2 tablespoons plus 1 teaspoon (or 2 1/3 tbsp) aged sherry vinegar
- 1 tablespoon warm water
- 1 cup extra-virgin olive oil
- 1.5 teaspoons Dijon mustard
- 1.5 teaspoons whole-grain mustard
- 1.5 teaspoons honey (or to taste)
- 2 thyme sprigs, leaves picked and finely chopped
- 1 large garlic clove, finely grated
- 1 teaspoon kosher salt, plus more to taste
- ½ teaspoon freshly ground black pepper
Instructions:
- Prep Shallots: Rinse diced shallots in cold water to reduce sharpness and drain well.
- Combine Acids: In a bowl, combine the shallots, sherry vinegar, warm water, and salt. Let it sit for 2–5 minutes to mellow.
- Emulsify: Whisk in the Dijon mustard, whole-grain mustard, honey, grated garlic, thyme, and pepper.
- Add Oil: Slowly drizzle in the olive oil while whisking constantly to create a thick emulsion.
- Adjust: Taste and add more salt or vinegar if necessary.
- Serve: Ideal for robust greens, salads, or roasted vegetables. It can be stored in the refrigerator for up to 1 week
