Arayes – Middle Eastern Meat-Stuffed Crispy Pita

Recipe Makes 8–10 Arayes

Ingredients for Arayes

  • – 3 lbs ground beef
  • – Pack of pita bread
  • – 2 bunches parsley
  • – 4 garlic cloves
  • – ½ white onion
  • – 1 jalapeño
  • – 2 tbsp ground cumin
  • – 3 tbsp sumac
  • – 2 tbsp Aleppo pepper
  • – 4 tbsp paprika
  • – 3 tbsp salt
  • – 1 tbsp black pepper
  • – 4 tbsp Bear & Burton’s Old Florida Worcestershire Sauce (@bearandburtons on Instagram)

How to Make Arayes 

  1. In a food processor or blender, add parsley, garlic, onion, and jalapeño. Blend until finely chopped.
  2. Using a paper towel, squeeze out as much excess liquid as possible.
  3. Combine the mixture with ground beef, Bear & Burton’s W Sauce, and all the spices listed above.
  4. Mix thoroughly and stuff the seasoned meat mixture into pita bread.
  5. Heat a pan on high and sear the stuffed pitas on all sides, using chili oil for extra color and flavor (optional).
  6. Cook for about 2 minutes per side, ensuring the ground beef is cooked through.
  7. To serve, rub with melted butter, garlic, and parsley for added richness.

Ingredients for the Sauce 

  • – ½ cup yogurt
  • – 5 tbsp za’atar (a ground thyme-based spice mix)
  • – 1 garlic clove, minced
  • – 1 tbsp salt
  • – Juice of 1 lemon
  • – 3 tbsp avocado oil
  • – ¼ cup water (to thin out the sauce, optional)
