Elevate your dinner table with this elegant side dish: Fondant Potatoes. Crisp on the outside, tender within, and infused with garlic, herbs, and buttery richness, these golden rounds bring restaurant-worthy flair to any meal. Whether you’re hosting a formal gathering or simply craving something refined, this dish delivers comfort with sophistication.
Ingredients:
• 4–5 large Yukon gold potatoes, sliced into 1” rounds
• Avocado oil (or another high-heat oil like safflower or peanut)
• Salt and pepper to taste
• 4–6 tbsp butter (regular or vegan)
• 8–10 cloves garlic, smashed
• 4–5 sprigs each of fresh rosemary and thyme
• 1 cup vegetable stock (or chicken/beef stock for added depth)
Instructions:
1. Prep the Potatoes
Slice into 1” thick rounds. Use a cookie cutter for uniform shapes (or hearts for Valentine’s Day). Soak in cold water for 15 minutes to remove excess starch. Pat completely dry.
2. Sear to Golden Perfection
Heat avocado oil in a skillet over medium-high. Reduce to medium and add potatoes. Sear 3–5 minutes per side until golden and crispy. Season with salt.
3. Butter Bath & Aromatics
Turn off heat. Use tongs and a paper towel to soak up excess oil. Return to medium heat. Add butter, garlic, rosemary, thyme, salt, and pepper. Let butter foam (don’t brown). Baste potatoes generously.
4. Roast to Finish
Pour in vegetable stock. Transfer skillet to a preheated 425°F oven. Roast for 15–20 minutes until potatoes are fork-tender and infused with flavor.
5. Serve & Swoon
Plate with extra herbs and a drizzle of pan sauce. These pair beautifully with roasted meats, plant-based mains, or a crisp salad.
