Cumin Carrot Ribbon Salad

One of the best dressings in a salad I’ve ever eaten. It’s addictive with some of the most intense flavor that you will absolutely love eating. Super easy to make.

RECIPE:

For the Cumin Vinaigrette Dressing :

  • 1. tosp. Cumin
  • 1/4 cup avocado oil
  • 2 tsp. Sesame oil
  • 2 heaping top. Dijon mustard
  • 3 tosp. Honey
  • 1 lime, zested and juiced
  • 1 tsp. Minced garlic

For the salad:

  • 3-4 carrots, ribboned with peeler
  • 1 zucchini, ribboned
  • 1 cucumber, ribboned Fresh parsley, chopped
  • Handful toasted sliced almonds 1/4 cup sesame seeds, toasted
  • Handful golden raisins (warmed for a few minutes with the sesame seeds
  • In a large bowl whisk together all the cumin vinaigrette ingredients together.
  • Then add all the salad ingredients into the bowl and mix.
  • This salad can last in the fridge for about 2-3 days.
  • I sometimes like to add romaine for a heartier salad dish.
