Persian Okra Stew with Potatoes 

(Khoresh Bamieh ba Seebzamini)

Vegan Vegetarian Recipe by Vegan International



500g Okra (ends cut)
300g Potatoes cut
1 1/2 cups Tomatoes chopped
1 Onion chopped
2 Bay Leaves
2-3 Cloves Garlic chopped
2-3 tbsp Tomato Paste
1/2 tsp Turmeric
1/2 tsp Chili Powder
1 tsp Salt
1-2 tbsp Lime or Lemon Juice
2 cups Water
2 tbsp Oil


  • Put the tomatoes into a blender and grind them to a paste
  • Heat two tablespoons of oil and fry onions and bay leaves for three minutes on low to medium heat
  • Add garlic and fry for one minute
  • Add turmeric and chili peppers and fry for thirty seconds
  • Add tomato puree and fry for six to seven minutes
  • Add two cups of water, tomato paste and salt and mix well
  • Add okra and potatoes and bring to boil
  • Let it simmer covered for about twenty minutes until the vegetables are tender
  • Turn off the heat and add lime juice
