Hali Ghorou is a vegetarian local specialty from my hometown, Babol, in the north of Iran.
Ingredients:
- Yellow plums 300 grams
- I large white onion
- 5 cloves of garlic
- Dried mint 2 tsp
- Maple syrup/honey
- 2 eggs
- Turmeric, salt and pepper
Directions:
- Wash plums thoroughly
- Remove stems
- Cook plums in a little bit of water until soft
- Peel off skin and remove pits from plums
- Slice onion and garlic
- Sauté onion with turmeric
- Sauté garlic with dried mint
- Add onions and garlic to plum sauce
- Add salt an pepper
- Add maple syrup or honey to taste
- Drop eggs in mixture
- Cover and cook until eggs are done
- Garnished with some fried onions and used red plum, fresh mint and garlic, and flower for presentation
