Carrot Frittata

This egg recipe can be made in less than 10 minutes, and is full of vitamin A, vitamin K and vitamin D.

Ingredients:

  • 8 oz (227g) Carrots
  • 1/4 Cup (Zereshk)
  • Dried Barberries
  • 2 Eggs
  • 1 Small Onion
  • 1/4 Cup
  • Bread Crumbs
  • 1/2 Tsp Ground Ginger
  • Parsley
  • Vegetable Oil

Preparations:

1- Grate the carrots and the onion.

Directions:

1- Combine the grated carrots and onion in a large bowl.

2- Stir in bread crumbs, eggs, ground ginger, salt and pepper, and dried barberries (Zereshk).

3- Fry the frittata in vegetable oil on both sides.

4- Serve with fresh parsley.
