Haleg is the richly spiced, aromatic mixture that Iranian Jews prepare as their version of charoset — the symbolic mortar-like food eaten during the Passover seder.
Ingredients:
•1 6-ounce package ground walnuts (1½ cups)
•1 6-ounce package ground almonds (1½ cups)
•½ cup pistachio nut meats, ground
•1 cup date paste
•½ cup raisins, ground
•½ cup grape juice
•1 banana, peeled and ground
•1 apple, peeled and ground
•2 tablespoons charoset spice
Instructions:
Grind together all ingredients that do not come already ground. Combine very well.
Tips:
Pre-ground walnuts and almonds are widely available and save preparation time. Date paste can also be purchased ready-made. Both are easily found at many kosher groceries. Process the remaining ingredients together into a wet paste similar in texture to red hummus. Charoset spice is made by Sadaf and available online; alternatively, simply mix equal parts of cardamom, ginger, and cinnamon. Keep Haleg refrigerated, and if it becomes too thick, thin it with grape juice or sweet wine.
