A taste of tradition from Northwest Iran, offering a perfectly balanced blend of flavors.
Ingredients:
- Carrots (sliced & lightly fried)
- Beef or lamb (seared)
- Onions (golden fried)
- Tomato paste (for color & depth)
- A handful of dried plums + ghooreh (unripe grape)
- Salt, turmeric, a touch of cinnamon, saffron
Method:
Simmer everything together until the meat is tender and the flavors come together beautifully.
Best served with fluffy saffron rice.
