Ingredients:

  • Carrots (sliced & lightly fried)
  • Beef or lamb (seared)
  • Onions (golden fried)
  • Tomato paste (for color & depth)
  • A handful of dried plums + ghooreh (unripe grape)
  • Salt, turmeric, a touch of cinnamon, saffron

Method:

Simmer everything together until the meat is tender and the flavors come together beautifully.

Best served with fluffy saffron rice.
