Ingredients:
3 eggplants cut into cubes 
2 cups of diced tomatoes 
2 onions 
1 or 1/2 head of garlic 
5 tbs chopped parsley (or dry parsley) 
2 tbs tomato paste (optional)
3 cups of water (better use tomato juice) &
