Gheymeh Nesar (Gheimeh Nesar, قیمه نثار) is a traditional Persian stew. Despite its name, this recipe is entirely different from the traditional Gheimeh made with chickpeas. Gheymeh Nesar originated from Qazvin, a city in Iran.
Ingredients for Advieh:
- 1 Black Cardamom
- 6-8 Green Cardamom
- 1.5 Inch Cinnamon sticks
- 1 Nutmeg
- 10 Black pepper corns
- 2 tsp Cumin
- 8 rose petals
Rest of the ingredients:
- 1kg lamb (Diced into 1 inch cubes and washed With salt)
- 3 Cups of Basmati rice (Washed until clear and half cooked on packet instructions)
- 1/2 Cup melted butter mixed with 1/2 cup of water
- 1 tbsp of Ghee
- 1 Large Onion (Diced)
- 2 Tomato Puree
- 1/2 tsp of Saffron mixed with 3 tbsp of water
- 1 tablespoon turmeric
- 1 teaspoon salt
- 2 tbsp of Advieh
- 1/2 cup sliced pistachio
- 1/2 cup sliced almond
- 1/2 Cup of Orange peel
- ½ cup rose water
- 1/2 cup barberries
- 2 tablespoon sugar
- 3 cup of water
- 60g butter
- 2 tablespoon vegetable oil
- 2 tablespoon zest
- 2 tbsp of fried onions
