Armenian chef, author, and TV personality Ara Zada from Los Angeles prepares a Yogurt and Meatball Soup called Matzoon or Kufte.
What do you call this soup?
The soup is often prepared with Kibbeh, which is a stuffed meatball. However, if you opt to make smaller, unstuffed meatballs, it becomes much simpler to prepare and equally delicious!
Ingredients:
Soup:
1/2 cup rice, short grain
4-6 cups water
2lb yogurt @karoundairies
1tb butter
3 garlic cloves minced
2 Tb Dried mint
Salt & pepper to taste
-Meatball:
1lb ground beef
1/2 onion grated
1/3 cup bulgar soaked and drained
1 tsp salt
1/2 tsp pepper
1/4 tsp all spice
Directions:
-Mix meatball ingredients together and roll 1″ balls
-Cook rice and water in for 30 min add in meat balls, cook for additional 15-20 min or until rice is pulverized. It should be watery and starchy.
-Add starchy water to yogurt to temper and add yogurt to pot.
-In a medium sauce pan over medium high heat Saute butter, garlic and mint for about 1 min.
-Add it to soup.
-Bring soup up to temperature and add salt and pepper to taste.
-Be careful not to boil because the yogurt will break.
