Cilantro Lime Rice is bursting with zesty flavors from fresh cilantro, lime juice, and lime zest. It’s the perfect side dish for grilled meats, seafood, and vegetarian entrees. It’s also fantastic in burritos, tacos, and salads.

Ingredients:
Servings: 4 servings
- 2 Tbsp coconut oil, or extra virgin olive oil
- 1 cup long grain rice, jasmine or basmati rice, rinsed and well drained
- 1 garlic clove, minced
- 1 ½ cups filtered water
- ½ tsp fine sea salt
- Zest of 1 lime
- 1 Tbsp lime juice, plus more to taste
- ½ bunch cilantro, finely chopped (½ cup loosely packed)
Instructions:
- Melt the oil in a medium saucepan over medium-high heat. Add the uncooked rice and stir to coat it in oil. Continue to stir until the rice starts to turn golden. Add the garlic and stir for another minute, until fragrant.
- Add the water and bring it to a simmer. Then, reduce the heat to low, cover, and simmer until all the water is absorbed, about 18 minutes (or according to your rice package instructions). Remove from the heat and let it rest, covered, for another 10 minutes.
- Transfer the rice to a serving bowl and toss with fresh cilantro, lime zest, lime juice, salt, and jalapeño (if using). Add more salt and lime juice to taste if desired.
