Persian-Inspired Braised Short Ribs with Golden Potatoes

Ingredients:

  • 1.5 lbs boneless short ribs
  • 2 large onions, thinly sliced
  • 2 tbsp avocado oil
  • 1 tsp ground turmeric
  • 1-2 tsp cumin seeds
  • A generous amount of sliced garlic
  • Ground dried lime or lemon (to taste)
  • 7-8 medium golden potatoes, cubed
  • Salt and pepper (to taste)
  • Broth (as needed for moisture)
  • A pinch of saffron threads (optional)

Directions:

    • Sauté the Aromatics:
    • Heat the avocado oil in a deep pan over medium heat.
    • Add the thinly sliced onions and sauté until soft and golden.
    • Mix in the ground turmeric for a vibrant color.
    • Add the Short Ribs:
    • Place the boneless short ribs in the pan.
    • Sprinkle with cumin seeds and add the sliced garlic.
    • The forgiving recipe allows for variations, so adjust the seasonings to your taste.
    • Incorporate the ground dried lime or lemon for a tangy flavor.
    • Golden Potatoes and Seasoning:
    • Add the cubed golden potatoes to the pan.
    • Season generously with salt and pepper.
    • Pour in some broth to keep everything moist during cooking.
    • Cover the pan and let it simmer until the meat is tender.
    • Finishing Touch:
    • For a luxurious touch, infuse the dish with saffron threads.
    • Brew the saffron in a bit of warm water and add it to the pan.
    • Let everything cook for an extra hour until flavors are beautifully married.
