Pistachio cookies are a delightful treat that combines the rich, nutty flavor of pistachios with a soft, slightly fudgy texture. They’re quick to make and perfect for enjoying with a cup of coffee or tea.
Ingredients:
- 1/2 cup room temperature unsalted butter
- 3/4 cup sugar
- 3/4 cup flour (I use King Arthur’s GF flour when baking)
- 2/3 cup ground pistachio (I buy unsalted pistachios and grind them)
- 1/8 tsp salt
- 1/2 cup dehydrated strawberries, crushed Optional: add 1 drop of green food coloring
- and 1 tsp of pistachio extract
Directions:
- Beat butter with sugar
- Beat in flour, ground pistachio, and salt
- Optional: add food coloring and pistachio extract
- Scoop on to cookie sheet, bake in 350 preheated oven 10 minutes
- Top with crushed dehydrated strawberries.
