Pistachio Cookie

Pistachio cookies are a delightful treat that combines the rich, nutty flavor of pistachios with a soft, slightly fudgy texture. They’re quick to make and perfect for enjoying with a cup of coffee or tea.

Ingredients: 

  • 1/2 cup room temperature unsalted butter
  • 3/4 cup sugar
  • 3/4 cup flour (I use King Arthur’s GF flour when baking)
  • 2/3 cup ground pistachio (I buy unsalted pistachios and grind them)
  • 1/8 tsp salt
  • 1/2 cup dehydrated strawberries, crushed Optional: add 1 drop of green food coloring
  • and 1 tsp of pistachio extract

Directions:

  1. Beat butter with sugar
  2. Beat in flour, ground pistachio, and salt
  3. Optional: add food coloring and pistachio extract
  4. Scoop on to cookie sheet, bake in 350 preheated oven 10 minutes
  5. Top with crushed dehydrated strawberries.
