I grew up in a house where the one thing you could bank on being in the freezer was a big tub of that notoriously yellow Persian ice cream. When I was younger I remember thinking the frozen chunks of heavy cream were kinda weird, mostly because they aren’t sweet. Like why is there no sugar in this!?!? But now I consider it a lovely compliment to the sweet and fragrant saffron infused ice cream. When I saw @cookingwithayeh ‘s easy homemade idea I immediately had to make my own batch! Thanks again for the inspiration!
Recipe:
- 1.5 qt vanilla bean ice cream (softened)
- 1.5 tbsp saffron extract
- 1 tbsp rose water
- 1/2 cup heavy cream (frozen chunks)
- 2 tbsp rose petals (optional garnish)
- 1/2 chopped pistachios (optional garnish)
