On chilly December evenings, there’s nothing quite as comforting as a steaming bowl of soup. What better way to celebrate than with the viral lasagna soup?

This recipe is thick, creamy, and packed with flavor. From savory sausage to tender pasta and melty cheese—this soup has it all!
Ingredients:
- 1 lb ground beef, 80/20
- 1 yellow onion, chopped
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 2 tosp tomato paste
- 124 ounce jar tomato sauce
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- 1 tsp oregano
- 2-3 basil leaves
- 6 cups chicken broth
- Lasagna noodles, broken into small pieces 2 cups fresh spinach leaves
- 1/3 cup mozzarella cheese
- 10 ounces ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
Directions:
In a large pot on medium high heat, brown ground beef with salt & pepper. Add onion to the same pan & cook until softened. Add garlic, mix until fragrant. Add tomato paste, cook down & season with Italian seasoning, red pepper flakes & oregano. Pour your favorite tomato sauce along with broth & basil leaves. Let it come to a boil before adding in lasagna noodles. Once pasta is cooked, add spinach and mozzarella. Serve with a dollop of ricotta cheese mixture , some fresh basil, parsley & Parmesan.
