RECIPE & INSTRUCTIONS
(4 servings, 2h prep time):
-5 big potatoes
Wash them then poke with a fork and bake at
180C/360F for 1h 15min.
Cut in half and scoop out the soft part.
- 1 big leek
- 2 tsp vegan butter
Saute the leek until soft, then add the scooped out potato.
Turn off the heat.
- 100ml vegan cream
- salt and pepper to taste
- 1 tsp thyme
Mash until creamy.
- the potato skins
- a glug of oil
- salt and herbs to taste
Toss and lay out in a lined baking dish or cake tin.
Add the mashed potatoes and optionally top with breadcrumbs.
Bake for another 35mins and enjoy!
