Lule Kebab Lavash Rolls

Lule Kebab Lavash Rolls, also known as Luleh Kabab Rolls, or Koobideh Rolls, or Kofta Rolls are a delightful Middle Eastern dish featuring juicy, spiced ground meat kebabs wrapped in soft lavash bread. These rolls are often garnished with fresh herbs and vegetables, making them a flavorful and satisfying meal.

Ingredients:

  • 2 lbs ground beef or lamb
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp tomato paste
  • 5 tbsp tomato sauce
  • ½ cup plain bread crumbs
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp Aleppo pepper (or red pepper flakes)
  • 1½ tsp salt
  • 1 tsp black pepper
  • ½ tsp dried oregano
  • 1 bunch fresh parsley, finely chopped
  • ½ lemon, juiced
  • 1 egg
  • Lavash bread
  • Fresh vegetables (e.g., tomatoes, cucumbers, lettuce) for garnish

Directions:

  1. In a large bowl, combine the ground meat, onion, garlic, tomato paste, tomato sauce, bread crumbs, cumin, paprika, Aleppo pepper, salt, black pepper, oregano, parsley, lemon juice, and egg. Mix well until all ingredients are thoroughly combined.
  2. Shape the mixture into elongated kebabs.
  3. Throw down a sheet of lavash, spread out a thin layer of kebab meat. Top it with some oil. Roll it up. Slice it into 1″ pieces and put it into skewers.
  4. Cook over hot coals, turning constantly, or just throw them on the grill.
  5. Place the cooked kebabs in the lavash bread on a plate and add fresh vegetables.
