“Kal Kabab is a wonderful dish from Northern Iran. The name might be confusing to some who would expect some type of meat Kabab… Instead it’s a delicious aubergine dip containing walnuts and pomegranate molasses. The ground walnuts become creamy once mixed with the aubergine (eggplant) – similar to using tahini. I’m not sure why this recipe is so unknown because it’s fantastic and simple to prepare.
