DALAR (also known as HALAY DELAR or DELAL) – Persian Green Salt With Fruits

Call it a snack, a salad, or even a dessert, Dalar goes nicely with Goje Sabzs (sour plums), Loquats, Wild Plums, Persian Cucumbers, or Oranges.

Ingredients: 

  • Wild Plums (red ones)
  • Loquats (yellow ones)
  • Sour Plums (green ones)
  • Coriander (Cilantro)
  • Mint
  • Chochagh (Sea Holly, or Blue Eryngo is a herb that grows in Iran’s northern provinces. Mint can be used as a substitute.)
  • Khalvash (Kotkotoo) – also referred to as Mentha pulegium or pennyroyal (spearmint, oregano, or thyme can be used as substitutes)
  • Golpar (aka: angelica powder is ground seeds from Persian Hogweed.)
  • Salt
  • Angelica
  • Pomegranate Paste

Instructions:

  • Wash fruits (wild plums, loquats, and sour plums)
  • Chop coriander, mint, khalvash, and chochagh
  • Sprinkle herbs with salt
  • With a heavy object (in this case a large rock) smash the herbs to make a paste
  • Smash the fruits
  • Mix the herb paste with the smashed fruits
  • Sprinkle golpar on the fruits with the herb paste
  • Pour Angelica, or pomegranate paste/molasses on the fruits with golpar and herb paste
