Persian-Inspired Braised Short Ribs with Golden Potatoes
Ingredients:
- 1.5 lbs boneless short ribs
- 2 large onions, thinly sliced
- 2 tbsp avocado oil
- 1 tsp ground turmeric
- 1-2 tsp cumin seeds
- A generous amount of sliced garlic
- Ground dried lime or lemon (to taste)
- 7-8 medium golden potatoes, cubed
- Salt and pepper (to taste)
- Broth (as needed for moisture)
- A pinch of saffron threads (optional)
Directions:

- Sauté the Aromatics:
- Heat the avocado oil in a deep pan over medium heat.
- Add the thinly sliced onions and sauté until soft and golden.
- Mix in the ground turmeric for a vibrant color.
- Add the Short Ribs:
- Place the boneless short ribs in the pan.
- Sprinkle with cumin seeds and add the sliced garlic.
- The forgiving recipe allows for variations, so adjust the seasonings to your taste.
- Incorporate the ground dried lime or lemon for a tangy flavor.
- Golden Potatoes and Seasoning:
- Add the cubed golden potatoes to the pan.
- Season generously with salt and pepper.
- Pour in some broth to keep everything moist during cooking.
- Cover the pan and let it simmer until the meat is tender.
- Finishing Touch:
- For a luxurious touch, infuse the dish with saffron threads.
- Brew the saffron in a bit of warm water and add it to the pan.
