Irooni Pasta Salad

I made up this “Irooni Pasta Salad ” – Iranian flavors made into a pasta salad! Lots of fresh herbs and feta, who could resist! The perfect dish for hosting a brunch or lunch! Hope you enjoy it as much as I do!

Ingredients:

  • 2 Pounds boiled fussili pasta
  • 3 persian cucumbers chopped finely
  • 1/2 cup cherry tomatoes cut into halves
  • 1 cup of freshly chopped herbs ( whatever you have – mint basil dill parsley cilantro scallions )
  • 1/2 cup chopped endives
  • 1/4 cup friend onions
  • 1/4 cup chopped green bell pepper
  • 1/2 cup feta cheese

Saffron creamy Sumac dressing :

  • 3 tbsp finely chopped shallots
  • 3 tbsp capers
  • 2 tbsp sumac
  • 1/3 cup seasoned rice wine vinegar
  • 3 tbsp mayo
  • 2 tbsp saffron water
  • 1/3 chi red wine vinegar

Directions:

  1. Add all pasta salad ingredients into a mixing bowl
  2. Mix all salad dressing ingredients into a bowl. Toss with pasta salad! Garnish with feta and more sumac! Enjoy
