I made up this “Irooni Pasta Salad ” – Iranian flavors made into a pasta salad! Lots of fresh herbs and feta, who could resist! The perfect dish for hosting a brunch or lunch! Hope you enjoy it as much as I do!
Ingredients:
- 2 Pounds boiled fussili pasta
- 3 persian cucumbers chopped finely
- 1/2 cup cherry tomatoes cut into halves
- 1 cup of freshly chopped herbs ( whatever you have – mint basil dill parsley cilantro scallions )
- 1/2 cup chopped endives
- 1/4 cup friend onions
- 1/4 cup chopped green bell pepper
- 1/2 cup feta cheese
Saffron creamy Sumac dressing :
- 3 tbsp finely chopped shallots
- 3 tbsp capers
- 2 tbsp sumac
- 1/3 cup seasoned rice wine vinegar
- 3 tbsp mayo
- 2 tbsp saffron water
- 1/3 chi red wine vinegar
Directions:
- Add all pasta salad ingredients into a mixing bowl
- Mix all salad dressing ingredients into a bowl. Toss with pasta salad! Garnish with feta and more sumac! Enjoy
