For your next Nowruz (Persian New Year) party, IFN (India Food Network) features celebrity Chef Mandana Karimi and her five course meal.
Ingredients:
1.)Sabzi Polo Ba Mahi (Fish with Rice)
- Long grain rice
- Tilapia fish Butterflied
- Chopped dill (fresh or dried)
- Chopped Scallions
- Chopped Parsley
- Chopped Coriander
- Turmeric
- Black pepper
- Salt
- Ground saffron
- Lemon juice
- Butter
- Vegetable oil for frying
2.) Kuku Sabzi (Herb Omelette)
- 4 Eggs
- Fresh Dill
- Fresh Coriander
- Fresh Parsley
- Dried Mint
- Salt
- Black Pepper
3.) Mast-o-Khiar (Yoghurt Dip)
- Yoghurt
- Cucumber
- Dried mint
- Salt
- Black Pepper
4.) Shirazi Salad
- Red Onion
- Tomatoes
- Lemon Juice
- Dried Mint
- Salt
- Black Pepper
Methods:
1. Sabzi Polo Ba Mahi (Fish with Rice)
– Take water and boil it for some time.
– Once it has boiled then add a cup of soaked rice (long grained) to it.
– Then add chopped parsley, dill and coriander leaves along with spring onions (scallions). Mix it well and leave it for a few minutes.
– When the rice turns soft, then pour everything through a strainer in a big bowl.
– Add butter into the pan and then again put the rice for cooking and simmer for 5 Mins.
– Add saffron dissolved with hot water to the rice in order to give it a colour.
– Let the rice happen.
– Garnish with saffron with water and mix it for the final time.
– Take a tilapia fish and start marinating it.
– Apply salt, black pepper, turmeric powder, lemon juice and saffron.
– Cover the fish with aluminum foil for about 4-5 Mins.
– Then take oil in a pan and let it heat.
– Add the fish in the hot oil for frying purpose. Fry both sides nicely.
– Take it out in a plate coated with tissues to remove the excess oil.
– Ready to Serve with other food accompaniments.
2. Kuku Sabzi (Herb Omelette)
– Take chopped parsley, dill leaves, coriander leaves and spring onions (scallions) in a bowl.
– Break in the egg yokes.
– Add salt to taste, black pepper and turmeric powder over the mixture. Mix it all.
– Pour the mixture into a pan with hot oil. Spread it around nicely.
– Cover it with a lid for about 5-6 Mins.
– Once it’s done flip the pan and take it out on a plate.
3. Shirazi Salad
– Take chopped tomatoes, cucumber and onions in a bowl for the salad.
– Add dried mint, lemon juice and olive oil. Mix it up.
– Put a pinch of salt and dried mint leaves. Give it a mix again and its ready.
4. Mast-o-Khiar (Yogurt Dip)
– Take yogurt in a bowl.
– Add grated cucumber, dried dill and mint leaves, along with chopped walnuts. Mix it up well.
